The Guide to Preserving Food Safely is a compilation
of my notes and text from many years of canning and freezing what comes our of
garden and the meats we process each year to feed our family. There are
currently over 600 pages of information and we are constantly improving and
adding to this book as information as we try new techniques, recipes and learn
new things. Much of the information is provided by our readers. We hope you find the contents beneficial.
Most of the information has been pulled from the
USDA guide to canning, and we frequently check for new information there to
insure that the information we provide you is accurate and safe. When it comes
to canning, you can never be too careful. If in doubt about a can of preserved
