Kitchen Substitutions & Replacements Use 'evaporated milk' in place of whole milk in cooking. We choose evaporated milk for the richness, the ease of storage and the lack of refrigeration needed to store it. It can be used in place of whole milk in any recipe by cutting it in half or thirds with regular drinking water. No buttermilk? Use regular whole or evaporated milk with a tablespoon of apple cider vinegar in it. Make your own vinegars for gift giving, and table use by preparing a country wine with no preservatives and letting it 'go'. Left ignored wine becomes vinegar. No milk for a recipe? Use coffee creamer, non dairy dried, powder milk. Depending on the recipe, you can eliminate the milk and use another 'moist' ingredient. Goats milk can be used as a replacement for any cows milk in any recipe without a negative difference in flavor, texture or nutrition. 3 large eggs = 4 small, 2 large = 3
small. Omit salt in all recipes! Better for your health Oil, Shortening, Butter, lard, olive oil, canola oil, vegetable oil can be used interchangeably depending on the recipe. Cheese are interchangeable. Mozzarella for American, Colby for Cheddar etc... Baking biscuits and short on lard. Try mayonnaise. Toss plain pasta with almost anything and mayo for a quick meal. We have used all kinds of herbs, parmesan cheese, veggies, ranch dressing, Out of salad dressing? Make your own......start with a base of mayonnaise or yogurt adding herbs as you go. Our favorite is a simple dressing of mayo and vinegar with dill. Pancake syrup, molasses, cane syrup, honey and jams can be used interchangeably on pancakes and waffles. No yeast for bread? Make sourdough starter, tortillas, or beer bread. Save vegetable leftovers in a freezer bag for additions to soups and stews. We keep one bag, and add to it until we have enough for stew. Meats can be kept separately and used for quick additions to stir fry or soups or salads. You can substitute whole milk, 2% milk or goats milk for evaporated milk in any recipe. Don't have vegetable oil for a baking recipe? Use softened butter or margarine instead. For frying try shortening, lard, or butter.
